Fig, Prosciutto and Blue Cheese Pizza

My grandpa just turned 94, so this post is dedicated to him and his glorious figs. I used the first few ripe figs of the season from his backyard to make this pizza, added an entire Trader Joe's package of prosciutto, large handful (I have big hands) of blue cheese and this pizza turned into easy late summer gold.

Fig, Prosciutto and Blue Cheese Pizza

1 package pizza dough (I used Trader Joe's dough)
3-4 ripe figs, sliced
1/2 cup blue cheese, crumbled
1 package (~ 4 oz) sliced prociutto

  • Heat oven to 500 degrees.
  • Follow pizza dough instructions
  • Sprinkle topping on top.
  • Bake for about 12-15 minutes or when golden brown.

i relate figs to my grandpa too! i would watch him pick fresh figs from the tree in the front yard. I hated them when I was younger but appreciate them now!
