It's been time since I last had a bowl of cereal, much to John's - my older brother - dismay. John has eaten a bowl of cereal for breakfast and let's not forget dessert, daily since the time he's grown enough teeth to chew. While cereal has always served it's purpose, it's never been a go-to meal for me. Let's be real, I prefer my soft baked goods. However, I have always loved cinnamon toast crunch cereal - so deliciously sweet and cinnamony with its prized cinnamon floater residue leftover in the milk after eating a big bowl. As a devout muffin eater, I decided the cereal should be turned into muffins. Now I've scored some street cred from my big brother while eating breakfast cupcakes.
Cinnamon Toast Crunch Muffins
6 muffins
2 tbsp vegetable oil
2/3 cup Greek yogurt
1 large egg
1/3 cup milk
1 tbsp vanilla
3/4 cup sugar
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
3/4 cup flour
1 cup cinnamon toast crunch cereal, crushed (I used a food processor, but I'm sure a ziplock bag and hammer would do in a jiffy)
- Heat oven to 350 degrees.
- Mix all dry ingredients and just 1/2 of the cinnamon toast crunch in a bowl.
- In a separate bowl, combine wet ingredients, then add to dry ingredients.
- Pour into greased muffin cups. Sprinkle with remaining cereal.
- Bake for about 30 minutes.

Sound like a good compromise. If spoons go the way of the dodo, cereal muffins I shall eat. Until then I continue my crusade with spoon in hand.
I want some of this cinnamon toast crunch you speak of! We don't get the same dazzling variety of cereals here in Australia....still, at least I can make these and then I will know what it tastes like!
Couldn't even tell you the last time I bought cereal, but I'm tempted to now so I can make these.
Although I don't know this cereal I know I would love it with cinnamon and the muffins sound delicious.
