French Lentil Hummus

After devouring the carrot hummus per my big brother John, I whipped up this french lentil hummus from the big batch of lentils I made for his Portland arrival. The weekend turned out to be a massive hummus fest. I sort of hesitated to make this version, thinking about adding chick peas to smooth it out but John pushed for 100% lentil. Since french lentils are small, it is hard to get complete smoothness in the 'ol kitchen aid food processor, but we are cool with a little pulp. French lentils are delicate, and have a mild peppery punch to them which resulted in a rich, flavorful protein packed spread. I didn't deviate from the standard hummus recipe because I wanted to the lentils themselves to shine.

French Lentil Hummus

2 cups cooked french lentils (save a few lentils for decor)
1 heaping tablespoon of tahini
juice of 1 lemon
1/2 teaspoon sea salt
1/4 cup extra virgin olive oil
1 clove chopped garlic
2 teaspoon white vinegar (or extra lemon juice)

Blend everything but the lentils in a food processor until completely smooth. Add lentils and blend until smooth. It takes longer than regular chick pea hummus - about 4-5 minutes. Top with extra lentils for decor.

Oh I love lentils. This is a great idea! Now that I've made your carrot hummus, I'm on a role of making hummus dips instead of buying them. I will have to try this version one day because I do have a stash of dry French lentils that need to be used soon.

Helen - Yeah! What are you using the blend everything together? I love lentils too - I say we join up with donkey and the carrot (above) and have a huge lentil and hummus party. Just get crazy. We will never get sick of hummus!! Muahaha

Anna, I use a food processor to blend all the ingredients together. I think any kind of bean/pulse can be created into a dip...think about it...mung bean dip, pinto bean dip, fava bean dip...and a nice chianti - haha!

Helen - I would love to see mung bean dip! I have tried other beans like pinto but whatever you do, DO NOT try kidney beans. It's just gross for some reason.
