Arugula Lemon Hummus
- 2 cups of chickpeas (or 1 16oz can)
- 1 clove garlic, minced
- 1/2 cup chopped arugula
- extra arugula for garnish
- 1 tablespoon tahini
- 1/4 cup olive oil
- juice from 1 lemon
- zest from 1 lemon
- 1 teaspoon or less of salt
In a mini food processor blend all ingredients except chickpeas until smooth. Add chickpeas and continue to pulse until smooth, adding extra bean liqueur until the desired consistency is reached. Serve in a bowl, drizzle with extra olive oil and garnish with arugula ribbons.

I wish I were more diligent about making my own hummus because this looks incredible! It's so pretty too just like a fresco painting. Growing your own arugula too? Impressive!
Natassia - I bet you could grow it inside by a window in a big pot - that's kind of what I am doing. It grows so fast!
Helen - Do you have a food processor? I have a mini one that works perfect for a can of garbanzos in a jiffy.
I make hummus the classic way, but this version appeals to me as well. Love arugula. They also love that green in Egypt apparently.

Anna, I do have a food processor. I'm just never organized enough to make hummus so I tend to pick up the ready made stuff at the grocery store. There's no comparison, I know!
Helen - In all honesty I do the same time soon - I have a special affinity for Sabra brand hummus - they sell it at costco - its from Astoria NY so I somehow think Greeks make it?? lolz
