Kopiaste- crust recipe using tahini and digestive cookies. Just a note of the digestive cookies, it's not what you think it is - they are glorified graham crackers also known as wholemeal "biscuits" popular in the UK, Ireland and Greece. I love these biscuits, and always buy them whenever I see them at Papacristos C+K or at ethnic markets in Little Armenia. They look like this:
1 cup pitted cherries
1 package cream cheese
1/3 cup sugar
1 tsp vanilla extract
1/2 package Digestive biscuits
2 tablespoons tahini
1-2 tablespoons melted butter
Preheat oven to 350 degrees. Whirl biscuits in food processor until fine, add tahini and mix again until everything is combined. Empty into a baking vessel. Add melted butter, mixing to combine then press into bottom of pan to form the crust.
Beat cream cheese, sugar, egg and vanilla until fluffy and pour into crust, layering with cherries.
Bake for 40 minutes or until golden brown on top. Chill for at least 2 hours before consuming.
