Fresh Cherry Cheesecake

I usually make cheese cake with my grandfather's boysenberries baked in, but since there was an abundance of cherries lying around the house I decided to use them instead. I love the cherries + cheesecake combo, but usually have it with the tacky bright red stuff from the can. It was time, I rolled up my sleeves and pit my own cherries. I was also curious to try Ivy's - the totally awesome Cyrptiot Food Blogger Extraordinaire, Kopiaste- crust recipe using tahini and digestive cookies. Just a note of the digestive cookies, it's not what you think it is - they are glorified graham crackers also known as wholemeal "biscuits" popular in the UK, Ireland and Greece. I love these biscuits, and always buy them whenever I see them at Papacristos C+K or at ethnic markets in Little Armenia. They look like this:
The cheesecake came out fabulous, with succulent pieces of cherries and a robust crust. I am officially in love with this cheesecake crust recipe and will use it from now on. You can double the recipe (and bake longer) if you want a deeper dish cheesecake.
Ingredients:
1 cup pitted cherries
1 package cream cheese
1/3 cup sugar
1 egg
1 tsp vanilla extract
1/2 package Digestive biscuits
2 tablespoons tahini
1-2 tablespoons melted butter

Directions:
Preheat oven to 350 degrees. Whirl biscuits in food processor until fine, add tahini and mix again until everything is combined. Empty into a baking vessel. Add melted butter, mixing to combine then press into bottom of pan to form the crust.

Beat cream cheese, sugar, egg and vanilla until fluffy and pour into crust, layering with cherries.

Bake for 40 minutes or until golden brown on top. Chill for at least 2 hours before consuming.

First off, I've never officially made a cheesecake...now you have me wanting a go! Ivy is a great baker and I adore her recipes too...she has some great stuff. Digestives go well with hunks of Manchego.

Good idea with the cookies, looks really good. I have heard of using crushed cookies as a crust before, always use the typical graham crumbs, something new to try out, thanks.
