Coffee Mascarpone Muffins with Dark Chocolate and Raspberries

I got a little jiggy with it one night and baked up these muffins, initially attempting to make a tiramisu type muffin with mascarpone. I found Just Jenn's Recipe for Mascarpone Chocolate Chip Muffins and went from there adding khalua, espresso, 70% dark chocolate and a pint of fresh raspberries to the batter. The result was a very adult version of a cupcake. The flavors were intense and the batter rich, but the overall product was not super sweet allowing. We ate these out of the oven with vanilla ice cream, suggested by my sister-in-law, making for a heavenly combination! They were also delicious the next morning for breakfast with coffee.

1 (8 ounce) package mascarpone cheese, softened
1/4 cup butter, softened
1 egg, room temperature
1/3 cup milk
1/4 cup Kahlua
2 Tablespoons boiling water
2 Tablespoons instant espresso
1/2 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 lindt bar 70% dark chocolate smashed into pieces with hammer
1 pint hulled raspberries

Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or use paper liners. Stir hot water and espresso in a large bowl. Add to mascarpone. Beat mascarpone and butter together until fluffy. Beat in egg, milk, Kahlua and vanilla.
Combine the flour, sugar, baking powder and salt. Stir flour mixture into wet mixture until just combined. Don’t overmix! Fold in chocolate chocolate chunks and raspberries. Spoon batter into prepared muffin cups filling them 3/4 full.

I just wiped the saliva off my computer screen! Man these look good...with coffee as a morning treat would be my preferred way of gulping them down..but never say no to ice cream either.

A rainbow of colours and flavah. I see that your logic prevailed and didn't cook-up banana & onions!

Are these the muffins that your brother ate up?

I don't blame him one bit. ;)

OMG, those look good. I have to make some bran muffins tonight, but I'll look for the mascarpone this weekend and try them. Blueberries or strawberries could be good, too.

Peter - Hehe, thanks Aussie drool!

Peter - Rainbow muffin wins over banana & onion no doubt. yikes.

Rosa - Lots of drool going!

Diana - hah! Yes! I was lucky to get just one in the morning. He is a self proclaimed vulture.

SouthBayGuy - Mmm I do love bran muffins and the fruit would be perfect. I like your style.
